Serve Chicken Zucchini Bowls Instead of Pasta for An Easy Veggie-Forward Meal

I’m not a vegetarian and will probably never be, but it’s never a bad idea to eat more vegetables. One of my favorite easy swaps is to make zucchini noodles instead of regular pasta. The only special tool you need is a spiralizer, which cost less than $20 on Amazon. You can also use it to spiralize carrots and squash, though for this recipe, stick with zucchini.

The first thing you do is cook the chicken since that takes the longest. I like to soak mine in water with baking soda for ten minutes or so; this ensures really tender meat. Once that’s done and cooling, start heating some oil in a pan. Spiralize the zucchini and add to the hot pan, tossing with the oil. Season well with salt, pepper, and garlic powder. You can customize your bowls with other veggies you like, like tomato, cucumber, red onion, and so on. I like to finish the bowl with a big dollop of homemade tzatziki sauce, which I’ll tell you how to make in the recipe below.

Chicken Zucchini Bowls w/ Homemade Tzatziki

Serves: 2


Two large chicken breasts

Two medium-sized zucchini

One large tomato

1 cup chopped cucumber

½ cup chopped red onion

2 tablespoons olive oil

1 tablespoon baking soda

Salt to taste

Black pepper to taste

Garlic powder to taste

Tzatziki ingredients:

1 cup unsweetened Greek yogurt

¼ cup grated cucumber

Garlic powder to taste

Paprika to taste

Salt to taste

Black pepper to taste

Glug of olive oil


Marinate chicken in water and baking powder for 10 minutes while preheating the oven to 400-degrees.

Toss chicken in 1 tablespoon of olive oil and season well on both sides with salt, pepper, and garlic powder.

Bake for 10 minutes, then check the temperature. If it isn’t 165-degrees yet, bake another 5 minutes.

Now is a good time to make the tzatziki. Mix yogurt and grated cucumber together along with seasonings.

Add a glug of olive oil and stir. Store in the fridge to let the flavors blend.

When the chicken is done, heat a skillet on the pan. Spiralize the zucchini.

Add zucchini to the pan and toss to coat in the oil.

Season well with salt, pepper, and garlic powder.

While the zucchini cooks, chop up cucumber, tomato, and red onion.

After just five minutes or so of cooking, move zucchini to bowls.

Slice chicken.

To prepare bowls, top zucchini noodles with chicken and veggies, and a big spoonful of tzatziki.
