Go Veggie With Avocado And Mango Brown Rice Sushi
If you’re looking to substitute raw fish with something a little more green, this simple sushi recipe provides a vegetarian fix. All you’ll need are a few supplies from your pantry.
1 cup of brown rice
1 mango, ripe
1 sliced avocado
4 sheets of nori
2 cups of water
2 tablespoons of rice vinegar
1 tablespoon of sugar
1 teaspoon of salt
Place one cup of brown rice, two cups of water, and one teaspoon of olive oil in a pot and bring to a boil. Let simmer for 45 minutes. Take the rice off of the stove and fluff with a fork. In a small bowl, combine the rice vinegar, salt, and sugar. Heat this concoction in the microwave for a few seconds.
Mix the rice and the vinegar mixture in a large bowl. Make sure the ingredients are properly mixed together—the rice should begin to have a glossy look.
Put the first nori sheet onto a bamboo mat and press rice onto the bottom half of the sheet. At the bottom of the sheet, place the veggie ingredients on top of the rice. Use the bamboo mat to roll the sushi, and cut with a knife into small slices.
Cover and roll the remaining three sheets of nori, then relax and indulge!
